Ridge Gourd Sabzi

Relish this simple yet tasty ridge gourd sabzi by following simple procedure. Ridge gourd called as shirali in Marathi is an underrated veggie, which tastes so good. Try this for sure dear friends.

Ingredients:

Two medium ridge gourds

Cauliflower (Optional)

One medium potato (Optional)

One medium tomato

Oil as needed

Turmeric powder as needed

Kashmiri chilli powder as needed

Cumin seeds one tsp

Cumin powder one tsp

Coriander seeds powder one tsp

Garam masala (Optional) one tsp

Salt to taste

Method:

Peel the ridge gourds, but do not remove the skin completely, as this vegetable is delicate.

Before anything else, cut a slice from each edge of the ridge gourd and bite it to taste.

If it is even mildly bitter, discard it immediately. It can be harmful for our health if eaten bitter.

Now cut the ridge gourd into medium pieces.

As I said before, this vegetable is delicate so cutting into small pieces will steal the fun while eating it.

Now, heat a kadai. Add oil as required. Put cumin seeds. Wait till they flutter. Add crushed garlic cloves in it. After two to three minutes the raw smell of garlic will vanish.

Now, add the ridge gourd pieces, turmeric powder, cumin powder, coriander seeds powder and kashmiri chilli powder. Mix it well. If you are adding cauliflower florets and potatoes, add them now itself.

Now, cover the kadai with a lid, half filled with water.

Wait for five minutes. Remove the lid carefully. Add tomato pieces and salt as required. Again mix it well. Cover the kadai again with the lid. Make sure it should atleast half filled with water.

Adding potatoes helps to know if the sabzi is ready. If the potatoes are cooked, switch off the gas. Your delicious ridge gourd sabzi is ready.

Serve it hot with rotis, phulkas or bhakri. Enjoy. See you all till my next, simple recipe.
