Hello friends, if you are a lover of bakery foods, do try this recipe of instant fluffy vanilla cupcakes. I found it very easy and time-saving. Go ahead and try these for your snack preference.
Ingredients :
3/4 Cup Condensed Milk
3/4 Cup Butter (I used salted butter)
1 Tsp Vanilla Essence
1 1/2 cups all-purpose flour/Maida (Use till you get the required consistency)
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/3 Cup Soda (I used Kinley’s Soda)
1/4 Tsp Salt (Optional)
Method :
Whisk butter and condensed milk in a large bowl with a hand blender. Add vanilla essence and mix for 3 minutes till all ingredients are one. Add all-purpose flour, baking powder and baking soda. Mix again till you get a smooth batter. It will be slightly thicker than what we make for dosa batter. Add salt if you opt to use it and mix again. Use the fold method.
Preheat the microwave oven to 180 degrees Celcius. Add soda to the batter and mix well. Line up the butter paper moulds of cupcakes with ghee or butter. Put them in the mould tray. Pour the batter into the paper moulds and bake them at 170 degrees Celsius for 25 minutes.
Check with a toothpick or skewer to see if it comes out clean. Remove the mould tray and let it cool for 5 minutes. The cupcakes will come out fluffy and yummy. Enjoy with your family for snack time. 🧁🧁🧁
